Spicy Protein Beef Bowl

Intro:

There’s something about a warm beef bowl that just feels comforting.

This quickly became one of my go-to meals because it’s high in protein, full of flavour and honestly tastes like something you’d order out instead of making at home.

It’s simple enough for beginner cooks, easy to meal prep, and one of those meals you genuinely look forward to eating.

Ingredients:

For the Broth:

  • 1 cup of low fat cottage cheese
  • 1/4 cup Gochujang – swap for miso if you don’t like spice
  • 3 cups of chicken broth

For the Crispy Beef:

  • 500g Lean beef mince
  • 1 Tbs Maple Syrup
  • 2 Tbs Soy sauce
  • 2 Tbs Rice Vinegar
  • 1 Tbs Toasted Sesame Oil
  • 2 garlic cloves
  • 4 Green Onions slice finely

For serving

  • 1 1/2 cups Jasmine rice (uncooked)
  • 1 Cucumber diced
  • 1 cup edamame
  • 1 tbsp Crispy chilli oil
  • Sesame seeds (optional)
  • Salt + pepper to taste

Method:

  1. Make the broth
    Add the cottage cheese, chicken broth and gochujang to a blender and blend until smooth and creamy. Pour into a saucepan over low heat and gently warm through, stirring occasionally. Don’t let it boil.
  2. Cook the beef
    Heat a non-stick pan over medium-high heat. Add the beef mince and allow it to brown slightly before breaking it apart. Cook until nicely caramelised and crispy around the edges.
  3. Make the sauce
    In a small bowl, combine the maple syrup, soy sauce, rice vinegar, sesame oil, garlic and the white parts of the green onion.
  4. Coat the beef
    Pour the sauce into the cooked beef and stir well. Let it cook for another 1–2 minutes so the sauce thickens and caramelises slightly onto the beef.
  5. Prepare the bowls
    Cook the edamame according to packet instructions and heat the rice.
  6. Assemble
    Add rice to each bowl, pour over the warm creamy gochujang broth, then top with the crispy beef, cucumber, edamame, green onion and sesame seeds.
