High Protein Peanut Chicken Ramen

61g protein • One pan • Lunch / Dinner

Creamy, slightly spicy peanut chicken ramen with udon noodles, crisp snow peas, lime and chilli oil 🤍

Ingredients

Protein & Base

  • 1kg chicken breast
  • 3 serves udon noodles
  • Snow peas

Sauce

  • 1 tbsp red Thai curry paste
  • 2 tbsp crunchy peanut butter
  • 2–3 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 can coconut milk
  • Chicken stock (enough to loosen sauce)

To Serve

  • Lime wedges
  • Finely chopped coriander
  • Chilli oil
  • Olive oil

Method

Step 1 – Brown the chicken

Heat olive oil in a large pan over medium heat. Add chicken breasts and brown each side, then remove and set aside.

Step 2 – Make the sauce

In the same pan add garlic, red Thai curry paste, peanut butter and soy sauce. Stir together.

Pour in coconut milk and chicken stock, stirring until smooth and creamy.

Step 3 – Cook the chicken

Return chicken to the pan, place the lid on and cook for 15–20 minutes until cooked through.

Step 4 – Add noodles

Remove chicken and slice.

Add udon noodles and snow peas to the sauce and cook for 2–3 minutes until heated through.

Return sliced chicken to the pan and stir through.

Step 5 – Serve

Top with fresh lime, coriander and chilli oil 🤍
