A creamy slow-cooked chicken and chorizo orzo inspired by the flavours I fell in love with in Europe. Rich, comforting and packed with flavour while still being protein focused 🤍

Ingredients
Protein
- 3 large chicken breasts, diced
- 150g chorizo, sliced
Slow Cooker Base
- ½ cup sundried tomatoes, chopped
- 1 tbsp red pesto
- 1 tbsp sundried tomato pesto
- 1 tbsp fresh basil, chopped
- 2–3 garlic cloves, minced
- 100ml chicken stock
- Salt + pepper to taste
Add Later
- 300g orzo
- 700ml chicken stock
- 200ml thickened cream
- 1 capsicum, diced
- Handful spinach
- Extra basil, chopped
- 1 tsp chilli flakes
Method
Step 1 – Cook chorizo
Cook sliced chorizo in a pan until lightly crispy.
Step 2 – Build the slow cooker base
Add to the slow cooker:
- cooked chorizo
- diced chicken breast
- sundried tomatoes
- red pesto
- sundried tomato pesto
- garlic
- basil
- 100ml chicken stock
- salt + pepper
Cook:
HIGH: 2–3 hours
OR
LOW: 4–6 hours
Step 3 – Add remaining ingredients
Once cooked, add:
- orzo
- 700ml chicken stock
- thickened cream
- spinach
- diced capsicum
- basil
- chilli flakes
Cook for another 50 minutes until the orzo is tender and the sauce becomes creamy.
Step 4 – Serve
Give everything a good stir and serve warm 🤍
